Happy Accident: BLACK BEAN CHOCOLATE PUDDING

It’s a fun thing getting ready to move and having next to no food left in my apartment.  What do you do when all you see in your kitchen is canned black beans, dutch cocoa powder, maple syrup, pure bourbon vanilla extract, spices and a banana?

Duh.  Put them in a food processor.

<—ahhhh, so GOOOOOOD.

Since these are the only ingredients, this pudding is the opposite of the typical dairy, gluten, and sometimes nut-abounding custard.  Not only is it dairy, gluten and nut-free, but it is low-fat and has high levels of fiber, iron, protein, and antioxidants from both the black beans and dark chocolate.

So, you are avoiding histamines AND helping your digestion at the same time!

Happy Accident: BLACK BEAN CHOCOLATE PUDDING

1 can organic black beans, drained

1/3 cup maple syrup

4 tbs. pure, unsweetened cocoa powder

1 tsp. vanilla extract

2 tsp. ground ginger

preparation time: 3 minutes

serves: 2-3

1.  Easy: put all ingredients in a food processor and blend until creamy.

<–voila!!

<–for a little spunk, top with sliced bananas.
