Just because “summer is officially passé”, and our day of no Labor is over, doesn’t mean that you can’t enjoy summer fruits like peaches. I guess it’d be more accurate to say that now is the time to enjoy these luscious morsels of fresh sun-infused goodness, and they sure do go well with mornings.
For a quick, flavorful and healthy morning start, that is gluten, nut, dairy, and soy-free, boil 1 cup water, then add 1/2 cup gluten-free oatmeal, and a tiny pinch salt. Cover, reduce heat to low, and let simmer for about 5 minutes, or until oats have absorbed about half of the water. Add 1/2 of a diced peach and 1/4 tsp. cinnamon. Let cook another 5 minutes, or until all of the water has been absorbed and the oats are fluffy. Remove from heat, and either mix in 1 tsp. maple syrup or honey for some extra sweetness, or eat as is.
