Beemster Cheese. Lactose free and delicious? Oh, do a happy dance.
My “happy dance” this weekend looked a little something like this: cubed Beemster cheese (both sweet and nutty in taste, with zero lactose, and a crystalized-semi-hard texture), an aged goat cheese wedge, homemade chicken liver mousse quenelles (recipe to come soon to you in the Bubble Child Cookbook!), and a truffled-balsamic baby green salad. Me-yow!
Hailing from Holland, Beemster cheese comes in multiple varieties and is naturally free of lactose. It is available at many fine grocery stores and cheese shops, and always available at New Seasons in the Portland area.
