Inspiration: Warm Open-Faced Mustard Apple Speck Tartine

While cleaning out my fridge, meaning ridding it of all perishable food items before leaving for a trip by eating them all, every last morsel, all of it, I found a really easy and tasty open faced tartine that I couldn’t help but share.

Warm Open-Faced Mustard Apple Speck Tartine

The sweetness of apple, the gentle kick of mustard, with the warm aromas of smoked prosciutto and melted cheese on top

open-faced tartine, bubble child, mustard, cheese, speck, apple, gluten-free bread-Ingredients- 2 slices your favorite gluten-free bread or spelt bread*; 1-2 tbs. dijon mustard; 1/2 apple, thinly sliced; 2 slices speck (smoked prosciutto), bacon if you’re a fiend**; goat cheese (aged or fresh)***

-Method- Heat your oven or European toaster oven to a broil setting.  Spread a thin layer of mustard on your bread, then line with a thin layer of sliced apples.  Top with a few slices of speck, then top with cheese.  Broil until cheese is just golden.  Serve with a salad or soup to make it something gorgeous.

*Spelt bread is not suitable for those with Celiac as it is another form of wheat, but many with gluten intolerances find it easier to digest than wheat bread and it is easier to find in bakeries where gluten-free bread is not sold.

**For vegans/vegetarians, use your favorite deli meat substitute, hummus, or omit.

***The goat cheese on top is easier to digest than cow’s milk, but if you don’t do any dairy at all, use your favorite vegan cheese from your health food store.
